So if you happened to read the post on the Smoked Bbq Ribs you will know that for our Family’s Mother’s Day Bbq we had along side those delicious ribs some equally delicious salads. This potato and egg salad is one that my mom has been making for as long as I can remember. Nothing to me tastes quite like it, and I am a true connoisseur of anything potatoes (running a close second to my sister). Which is why, to make this recipe I use a 10lb bag of potatoes! Yes, you read correctly, 10lbs, which is 5 for her and the balance divided equally among the rest of everyone else. This also rings true for making mashed potatoes at any family gathering but that’s another story. Okay I may be exaggerating slightly, we would’t want to create any untrue images of my sister that you may at this time be developing, but potatoes are good. Period. Yes I know they have their bad side with their starchy carbs but with anything…moderation is key. (My sister doesn’t really eat the whole 5 pounds, maybe 3….still kidding)
So if you’re anything like my family, when you go to a picnic or bbq and someone brings potato salad, you drool at the sight of it waiting to dig in. It becomes utterly disappointing to discover it lacks that oomph of our own homemade. Yes, maybe we are a bit biased on that, but sorry, it’s that good. So here it is for you to try it yourself. This will make a bucket big enough to bring to a neighbourhood gathering, family reunion, church social, or our small family get together. Never forget the pickles!
Old Fashioned Potato Salad
Simply delicious old fashioned potato salad recipe that will continue to be a family favourite for generations to come.
Ingredients
- 10 LB yellow or white flesh potatoes
- 6-8 hard boiled eggs peeled
- 3/4 cup real mayonaise
- 3/4 cup krapt miracle whip salad dressing
- 1 mild onion finely chopped
- 1 + 1/2 tsp salt divided
- 1/4 tsp pepper
- 8-10 good quality dill pickles finely chopped, I use homemade but a fresh refrigerated Strub or similar will do
- 1 tbsp pickle juice
Instructions
- Peel and boil the potatoes until tender enough to put a fork in
- Drain Potatoes and put in large salad bowl
- Peel Hardboiled eggs and mash into the boiled and drained potatoes
- Mix all other ingredients with the warm potatoes so the potatoes absorb the dressing and flavour through
- Chill for at least 2 hours, preferably overnight
- Enjoy!
